All I Do is Win, Win, Win No Matter What
DJ Khaled had a big week in the news. I'm not going to get into it, you can google it. But let me just say - In the less controversial words of DJ Khaled,
Make 'em stay there"
I lost a bet this week. A sports bet at that- I really wanted the 76ers to beat the Celtics, and they didn’t. When I think about it, I am actually a pretty graceful loser. (But I am the gloatiest gloater in all of Gloatsville when I win.) If I lose a bet, you should feel pretty confident that I’m going to pay up. After all, I am nothing if I am not a woman of honor, and dignity, and lastly- a woman of my word.
So, long story short, I inadvertently welched on this bet. I won’t try to explain it, and I TOTALLY didn’t mean to, but I did- and yet somehow, even though I lost the bet, I still totally feel like I won. *I’ve promised to repay my debt plus an arbitrary 12% interest to the winner.
It's Mother's Day, and my mother is not unlike all of the other mother's out there- she just wants to be surrounded by her children and her grandchildren, and she doesn't want to have to cook. So, she asked my sisters and I to bring a salad, and she would provide stuff to throw on the grill, and we'd make the men do all of the grilling. I dug into the recesses of my brain trying to come up with something fun, and sort of summery, and definitely delicious to bring- and decided on a Chili and Lime Sweet Corn Salad with Queso Fresco and Cilantro. I've already had a request from one sister to put the cilantro on the side because she doesn't *like* cilantro. Weirdo. I will appease her, because I love her.. and because it's HER Mother's Day as well.
Here's what you need:(These are approximate, I don't measure anything... though I'm positive of the number of ears of corn I used.)
6 Ears of corn, husk and silk removed.
2 tablespoons of melted butter
2 tablespoons of lime juice
1/2 teaspoon chili powder
1 tablespoon chopped cilantro
1/2 cup of crumbled queso fresco
1/4 teaspoon salt (to taste)
So here's what I did:
Bring a large pot of water to a boil. Boil the corn for 3 minutes, and then remove from the water and allow to cool slightly so the corn can be handled. *Side note- people... stop overcooking your corn. Three minutes. I swear. That's all you need.
Cut the kernels off the cob into a large bowl. Set aside. *Pro-tip - do you have a bundt pan? Place the pointed end of your corn into the hole of the bundt pan, and cut the kernels off the cob there. They'll all fall into the bundt pan. GENIUS.
In a small bowl, whisk together butter, lime juice, chili powder and chopped cilantro.
Pour the chili lime mixture over the corn and mix to coat.
Add the crumbled queso fresco and stir. Season with salt to taste.
Serve room temperature-refrigerate leftovers.
Easy peasy.. and a definite win, in it's simplicity. Next week I'll be out there on the road again trying to find good breakfast. Today, I'm going to celebrate all the fabulous Mama's in my life.
